recipe: lasagne

Now I have always been a huge fan of Italian food...pasta is my thing :)
I have chef Gordon Ramsay the thank for this recipe.. I saw it on his live cooking programme a few years back.
With the sauce the amounts are not exactly specific..so I just go with it.

Ingredients -
1 large grated carrot
1 large grated onion
Oregano
Bay leaves (2)
Garlic (crushed)
A splash of Worcester sauce
Red wine ( I tend to put a lot in!!)
Tin of chopped tomatoes
2 spoonfuls of tomato puree
500g minced beef

White sauce -
25g plain flour
300ml milk
Butter
60g grated cheese

Method
Fry the carrot and onion in some olive oil and add two thirds oregano and bay leaves. Add the garlic, then the mince and allow to brown. Sprinkle over the Worcester sauce. Make a well in the middle of the sauce and add the puree, allow to simmer. Add the red wine to the outside of the pan, followed by the tomatoes. Allow the sauce to cook whilst you make the white sauce.

Melt the butter in a pan on a low heat, and add the flour..stirring to form a paste. Over a gentle heat slowly add the mill, whilst constantly whisking. Season well with salt and pepper before adding the cheese.

Now take the sauce off the heat and make sure to remove the bay leaves before starting your lasagne layers. Finish off with the rest of the oregano and some parmesan. :-)
