chicken and apple balls

This recipe comes courtesy of Annabel karmel.

I like to make my own food for the girls, so today I decided to give this recipe a try. They went down really well with Ariana at lunchtime.

2 tsp of olive oil
1 large onion chopped
1 large granny smith apple peeled and grated
2 chicken breasts cooked and chopped
1/2 tsp of parsley
1 tsp of thyme or mixed herbs
1 chicken stock cube crumbled ( after one year )
50g fresh breadcrumbs
Salt and pepper ( after one year )
Plain flour for coating
Vegetable oil for frying

Heat the oil in a frying pan and fry half the onion for about 3 minutes.
Using your hands squeeze the excess juice out of the apple.
Mix the apple with the chicken, herbs, breadcrumbs, stock and seasoning, and roughly chop in a food processor.
With your hands roll into 20 little balls, roll in flour then shallow fry until golden brown.
You can freeze after cooking and reheat in the microwave.
